That’s a valid point, Daniel Meador. I agree, knowing when to stop is crucial. I also don’t have a backlog more significant than 2 Sprints; this is a good size.
Regarding to the estimations, we use story points on the Product Backlog Item level. Then, once we have a Sprint planned, the team decides if they want to break into tasks or not.
However, I have to be honest, be careful with the estimation because the goal is to have an idea of how complex that is, it is not a commitment. Unfortunately, some teams love going into tech spirals during the estimation, which, in my opinion, generates waste.
